Ingredients Needed:
Ingredient A
10g Warm Water (35~40℃)
22g Instant Dry Yeast Powder
Ingredient B:
370g White Sugar
400g Water
Ingredient C
500g Uni-President My Day Home Made Series Bread Flour
Ingredient D
1-2 drops of food coloring of your choice / 2-3g of Edentown Natural Colorant (Add more to increase color intensity)
1-2 drops of flavoring of your choice (Optional)

STEPS
STEP 1: PREHEATING
Set a tier steamer pot or large wok (put a high wire rack) with water, bring to a boil, then turn off the heat and set aside. If you use an electric pot to steam, the water in the outer pot is about 3-4 rice cups, preheat and set aside.
STEP 2
Stir and mix Ingredient A and let stand for 30 minutes to activate the yeast.
STEP 3
Mix and dissolve Ingredient B until there is no particles of white sugar left.
To speed up the dissolving process, it can be heated slightly. Wait for it to cool down before heating it up again if it has been heated previously.

STEP 4
Combine all of the ingredients that have been left to stand (A, B, and C). Mix until no visible powder particles remain.
Divide the batter into a few bowls (depending on how many colors you are using), stir Ingredient D until they are evenly distributed.

STEP 5
Fill rice bowls 9/10 full with batter. It is able to makes 5-6 bowls of Huat Kueh.

STEP 6
Steam for 30–35 minutes over medium-high heat; do not open the cover for the first 15 minutes or it will not huat/will collapse.
If a shallow steamer is used, water must be added halfway through the cooking process to avoid drying it out.

STEP 7
Insert a chopstick into the cake to see whether it's done. It is not thoroughly cooked if there is batter stuck to your chopsticks. Steam for an additional 10-15 minutes.

Enjoy your freshly made color Fa Gao/ Huat Kueh!
