Ingredients Needed:
Part A
100g Warm Water (35~40℃)
22g Instant Dry Yeast Powder
Part B
370g Brown Sugar
400g Water
Part C
500g Uni-President My Day Home Made Series Bread Flour

STEPS
STEP 1: PREHEATING
Set a tier steamer pot or large wok (put a high wire rack) with water, bring to a boil, then turn off the heat and set aside. If you use an electric pot to steam, the water in the outer pot is about 3-4 rice cups, preheat and set aside.
STEP 2
Stir and mix Part A and let stand for 30 minutes to activate the yeast.
STEP 3
Mix and dissolve Part B until there is no particles of brown sugar left.
To speed up the dissolving process, it can be heated slightly. Wait for it to cool down before heating it up again if it has been heated previously.

STEP 4
Combine all of the ingredients that have been left to stand (A, B, and C). Mix until no visible powder particles remain.

STEP 5
Fill rice bowls 9/10 full with batter. It is able to makes 5-6 bowls of Huat Kuehs.

STEP 6
Steam for 30–35 minutes over medium-high heat; do not open the cover for the first 15 minutes or it will not huat/will collapse.
If a shallow steamer is used, water must be added halfway through the cooking process to avoid drying it out.

STEP 7
Insert a chopstick into the cake to see whether it's done. It is not thoroughly cooked if there is batter stuck to your chopsticks. Steam for an additional 10-15 minutes.

STEP 8
Insert a chopstick into the cake again to see whether it's done. If there is no batter stuck to your chopsticks, its done.
