500g My Day Home Made Series Bread Flour
175g Water
100g Sugar
100g Dairy Whipping Cream
30g Cream
25g Milk Powder
75g Whole Egg
7.5g Yeast
5g Salt
Milk Tea Custard
350g Milk
100g Egg Yolk
350g Dairy Whipping Cream
15g Earl Grey Tea Leaves
30g Cream
70g Sugar
30g My Day Home Made Series Bread Flour
Filling
120g - 180g Ready-made Jelly Pearl Boba
STEP 1
Preheat the deck oven with upper heat at 220°C and lower heat at 180°C.
Dough
In a mixing bowl, add all dough ingredients and mix to combine. Continue kneading till the dough is smooth and elastic.
STEP 2
Place the dough in a bowl and cover with cling wrap to allow the dough to perform its first rise (for about 60 mins at 28°C room temperature).
Tip: Keep the skin of dough moisturized by spraying some water.
STEP 3
Milk Tea Custard
A: 350g Milk, 350g Dairy Whipping Cream
B: 15g Earl Grey Tea Leaves
C: Mix 70g Sugar and 100g Egg Yolk to dissolve. Add 30g Bread Flour and mix well

2.Soak B in A for 15 mins
3.Strain and boil again
4.Add C and place on low heat. Keep stirring until a thick liquid forms.
5.Turn off the stove and add 30g Cream. Mix to combine.
STEP 4
Divide the dough into 60g each and shape into balls.
Let it rest for 15 mins.
Tip: Keep the skin of dough moisturized by spraying some water.
STEP 5
Flatten the dough and wrap in 10-15g boba.
Cover with cling wrap to allow the dough to perform its final rise (for about 60 mins at 35°C room temperature).

STEP 6
Make multiple cuts at the top of the dough.
Bake at 220°C/180°C for 10 - 12 mins.
STEP 7
Cool down the bread, then add in the milk tea custard filling into the hole and put some boba and cookies for decoration.
