How To Make Christmas Log Cake

Ingredients

Caramel

  • Sugar (65g)
  • Fresh Cream (75g)

Cream Filling

  • Egg Yolk (4g)
  • Unsalted Butter (250g)
  • Water (65g)
  • Sugar (95g)

Coffee Sponge Cake

  • Milk (50g)
  • Instant Coffee Powder (6g)
  • Honey (15g)
  • Olive Oil (40g)
  • Low Gluten Flour (70g)
  • Egg Whites (200g)
  • Sugar (80g)

Step 1

To make the caramel, melt the sugar on low heat before adding in the fresh cream and mix well. Once fully combined, let the caramel cool.

Step 2

To make the cream filling,

Separate egg yolks & egg whites. Ensure no egg yolks in the egg whites as the egg whites will not foam up.

Step 3

Boil water & sugar until the sugar is fully melted. Gradually add the sugar mixture into the beaten eggs while beating

Step 4

Cut the butter into small cubes before adding into the mixture while beating on medium speed. Beat until light & fluffy

Step 5

Combined the cooled caramel into the mixture & mix well with a spatula

Step 6

To make the coffee sponge cake,

Combine milk & instant coffee powder in a bowl before microwaving it for 30 secs. Combine honey, olive oil & low gluten flour into the coffee & mix well before setting them aside

Step 7

Whisk egg whites & sugar until stiff peaks before adding them into the cake batter in 3 equal parts.

Step 8

Coat the baking tray with olive oil & line with baking sheet before preheating the oven to 160°F. Pour the cake batter onto the baking tray & bake for 15-20 mins

Step 9

Once the cake is baked, let the cake cool before slowly separating the cake from the baking paper.

Step 10

Spread the caramel cream onto the cake & roll up the cake with the assist of a baking paper. Once rolled, remove the baking paper.

Step 11

Cut the end of the rolled cake diagonally & stack it on top of the cake to mimic a log cake.

Step 12

Spread the caramel cream evenly onto the rest of the log cake & use a fork to make wood grain lines. Garnish & decorate the log cake with christmas elements. Serve & enjoy !
