Taiwan Pineapple Tart

Ingredients:
Dough

250g Uni-President My Day Home Made Series Bread Flour 
Paste (Non-Halal) 
200g Melted Butter
​40g Milk Powder
30g Milk
70g Powdered Sugar
60g Egg Yolk

Filling
420g Tai Jye/Lescure Pineapple

STEP 1

Preheat the deck oven at upper deck 160°C and lower deck 160°C.

Dough
In a mixing bowl, add powdered sugar, milk powder and melted butter. Mix to combine.

STEP 2

In 3 additions, add in egg yolk and mix to combine.

In 2 additions, add in milk and mix well.

Add in bread flour and use a baking scraper to mix.

Please avoid gluten formation.

STEP 3

Divide the dough and shape into a ball:

Dough
30g each

Pineapple Paste
20g each

STEP 4

Roll out each dough until they form a thin rectangle. Wrap the filling inside and press into mold (6.5cm x 3.5cm x 2cm).

STEP 5

Bake at 160°C for 12-15 mins until it has slightly golden. Turn over the pineapple tart, and bake at 160°C/150°C for another 12-15 mins.
