Brown Sugar Fa Gao (Huat Kueh)

Ingredients: 
100g Warm Water (35~40℃) 
22g Instant Dry Yeast Powder 
370g Brown Sugar
400g Water
500g Uni-President My Day Home Made Series Bread Flour

STEP 1

Set a tier steamer pot or large wok (with a high wire rack inside) with water, bring to a boil, then turn off the heat and set aside.

If you use an electric pot to steam, the water in the outer pot is about 3-4 rice cups, preheat and set aside.

STEP 2

In a beaker/bowl, stir and dissolve yeast in warm water.

Cover with a cling wrap and the let yeast ferment (about 30 mins).

STEP 3

In a separate bowl, add brown sugar and water. Stir till fully dissolved.

Tip: To speed up the dissolving process, it can be heated slightly. If it has been heated previously, wait for it to cool before reheating.

STEP 4

Add yeast mixture, brown sugar mixture and bread flour. Mix till batter is smooth with no visible bumps.

STEP 5

Fill rice bowls 9/10 full with batter (5-6 bowls of Huat Kuehs).

Steam for 30–35 minutes over medium-high heat; do not open the cover for the first 15 minutes or it will not huat/will collapse.

If a shallow steamer is used, water must be added halfway through the cooking process to avoid drying it out.

STEP 6

Insert a chopstick into the cake to check if it's cooked thoroughly. If batter sticks to the chopstick, steam for another 5-10 mins. If the chopstick is clean, turn off the heat.
