Flour For Cakes
Cake flour is milled from soft wheat, sitting at a low protein content of between 7 and 9 percent. But what separates a good commercial cake flour from a basic low-protein flour is what happens beyond milling: starch modification. In commercial cake flour production, the starch granules are treated, typically through chlorination or heat treatment, to improve their ability to absorb fat and liquid evenly. Flour For Pastries
Pastry sits in the middle of the protein range and the challenge with pastry flour is finding that balance between enough structure to hold together and enough tenderness to avoid toughness.
