Ingredients:

250g Uni-President My Day Home Made Series Bread Flour
157.5g Water
​37.5g Sugar
25g Butter
37.5g Salt
4g Instant Dry Yeast
10g Edentown Korea Natural Sweet Pumpkin Powder
10g Everstyle Charcoal Powder

STEP 1

Preheat the deck oven with upper heat at 220°C and lower heat at 215°C.

In a mixing bowl, add bread flour, water, sugar, butter, salt and yeast. Mix to combine.

Continue kneading till the dough is smooth and elastic.

STEP 2

Place the dough in a bowl and cover with cling wrap to allow the dough to perform its first rise (for about 60 mins at 28°C room temperature).

Tip: Keep the skin of dough moisturized by spraying some water.

STEP 3

Divide the dough into 3 pieces - 290g, 110g and 70g.

290g Orange Dough
Add pumpkin powder to 290g dough and knead to combine.
70g Black Dough
Add charcoal powder to 70g and knead to combine.
110g White Dough

STEP 4

Form the dough into a ball and place in separate bowl. Cover with cling wrap to allow the dough to perform its second rise (for about 50-60 mins at 28°C room temperature).

Tip: Keep the skin of dough moisturized by spraying some water.

STEP 5

Divide the dough and shape into balls:
Orange Dough into 3 pieces (96g each)
Black Dough into 4 pieces (18g each)
White Dough into 2 pieces (55g each)

Let it rest for 15 mins.

STEP 6

  1. Flatten each dough
  2. Fold in the sides and pinch to the middle
  3. Flatten each dough and stack accordingly
    ​Orange > Black > White > Black > Orange > Black > White > Black > Orange
  4. Press each dough down slightly to stick

STEP 7

Turn the dough on its side and place it in a bread pan. Let it rise (for about 60 mins at a warm temperature).

STEP 8

Bake at 220°C/215°C for 30 mins.
