Ingredients
Dough
400g    Uni-President My Day
Home Made Series Bread Flour
3g         Salt
20g       Fine Sugar
200ml   Milk
4g         Instant Dry Yeast
1g          Cinnamon Powder
25g       Unsalted Butter
1            Egg
100g     Raisins

Paste
22.5g     Flour (Bread Flour/All-purpose Flour)
30ml     Water

Glaze
20g       Honey
20ml     Water

STEP 1

Preheat the oven at 180°C.

Dough
In a stand-mixer bowl, add all ingredients and mix on low speed till the dough comes together and pull away from the side of the bowl.

STEP 2

Lightly grease a large bowl and place the dough in the bowl.

Cover the bowl with cling wrap / warm towel, and allow the dough to rise for 60 minutes, or until double in size.

Tip: Keep the skin of dough moisturized by spraying some water.

STEP 3

Divide the dough into 12 equal pieces. Shape it into a ball and place it into a greased baking pan.  

Cover the shaped dough with cling wrap / warm towel, and allow it to rise for 40 - 60 minutes, or until double in size.

STEP 4

Paste

Mix the flour and water evenly. Pour the paste into a piping bag, and cut a small hole.

STEP 5

After the dough has risen, pipe a cross on each dough with the paste.

Bake at 180°C for 20 minutes.

STEP 6

Glaze

Dissolve the honey in warm water, and brush a layer of honey syrup over the baked bun to give a lovely shiny finish.
