A good baker measures carefully. A better one understands why. This glossary covers every essential baking ingredient at a functional level, from what it does and how it interacts with other ingredients to where substitutions hold up. These entries are written to be useful at the bench.
A
All-Purpose Flour
All-Purpose Flour sits at roughly 10 to 12 percent protein. This places it between the tenderness of cake flour and the strength of bread flour.
That middle ground makes it the default for cookies, muffins and quick breads. It provides enough structure without overdeveloping gluten in recipes that don’t need it. It is a reliable workhorse, but it is not universal.
When a recipe demands a fine crumb or a strong gluten network, all-purpose flour becomes a compromise. A chiffon cake made with it will always be denser than one made with proper cake flour. Similarly, a sourdough will always be slacker than one made with bread flour. Knowing where all-purpose flour shines and where it falls short is the key to getting the most out of it.

Baking Powder
A chemical leavening agent made from an acid, a base (bicarbonate of soda) and a starch filler, baking powder produces carbon dioxide bubbles that cause batters to rise. Most commercial versions are double-acting. This means they release gas twice: first when it contacts liquid and again when they hit the heat in the oven. Be sure to check the expiry date regularly. Old baking powder loses its potency without any obvious signs — that is, until you are met with a flat or poorly risen cake.
Baking Soda (Bicarbonate of Soda)
Unlike baking powder, baking soda is pure sodium bicarbonate. It needs an acid already present in the recipe to activate. Buttermilk, yoghurt, brown sugar, vinegar or citrus juice will all do the trick.
Be careful with your measurements. If you use too much baking soda without enough acid to neutralise it, you will be left with a faintly soapy, metallic taste in your finished bake.
It is roughly three to four times stronger than baking powder, so the two are not interchangeable in equal quantities.
Brown Sugar
Brown sugar is white sugar with molasses added back in, which gives it a deeper flavour, a slightly sticky texture and a lot more moisture than white sugar.
That added moisture is why cookies made with brown sugar tend to be chewier and softer. Light and dark brown sugar are not identical. Recipes that specify dark brown, such as gingerbread or sticky toffee pudding, are relying on that stronger molasses note for their signature flavour.
Butter
Butter contributes fat, flavour, moisture, and structure to your bakes. Most importantly, its temperature at the time of use completely changes how it behaves in a recipe:

What separates a good commercial cake flour from a basic low-protein flour, is starch modification: a treatment that improves the flour’s ability to absorb fat and liquid evenly, producing a finer, more stable crumb structure than protein content alone can achieve. Ash content matters here too. Typically below 0.50 percent in a well-milled cake flour, it indicates a high degree of refinement. That purity delivers a clean, bright colour and allows delicate flavours like vanilla, matcha and butter to truly shine.

Chocolate
Chocolate in baking comes in several distinct forms: dark (bittersweet or semisweet), milk, and white. Each behaves differently in terms of flavour, sweetness and how they melt.
The most important distinction for bakers is understanding the difference between couverture and compound chocolate:
Couverture chocolate contains a higher percentage of cocoa butter. This allows it to melt much more smoothly and delivers a superior texture and taste.
Compound chocolate swaps the cocoa butter for vegetable fat. While it is much easier to handle and melt, it produces a noticeably different, often waxier, flavour.
When in doubt, remember that most serious baking recipes always intend for you to use couverture chocolate.
Cocoa Powder
Natural cocoa powder is acidic with an intense chocolate flavour and reacts with baking soda in recipes to provide lift. Dutch-processed cocoa has been alkalised, giving it a milder, deeper flavour but no leavening reaction. The two are not freely interchangeable in recipes that rely on an acid-base reaction for a good rise. Most cocoa powder sold in Singapore is Dutch-processed, so it is worth confirming before swapping.
Condensed Milk
Sweetened condensed milk is cow’s milk with much of its water removed and a significant amount of sugar added. This process produces a thick, intensely sweet liquid used across Southeast and East Asian baked goods, no-churn ice creams and tart fillings.
Because it adds sweetness and moisture simultaneously, you will need to adjust other liquids or sugar in the recipe when incorporating it. Evaporated milk, which is concentrated but unsweetened, is a different product and not a substitute.
Cornflour (Cornstarch)
Cornflour is a fine, pure starch with absolutely no protein content. Because of this, it acts as a texture modifier in your baking rather than a structural ingredient.
It serves two main purposes in the kitchen:

Glucose Syrup

Milk

O

Salt
